Pickled Eggs & Beets

Pickled Eggs & Beets

Made these yesterday from our farm fresh eggs! Have to wait 4-5 days to try them out though...can't wait!:)

1/2 c vinegar

1/2 c water

1/2 c sugar

1/2 tsp. allspice

1/2 tsp. nutmeg

1/2 tsp. cinnamon

juice from large can of red beets

Boil all ingredients for ten minutes. Pour over 12 hard boiled eggs and red beets. Place in jar with tight lid; refrigerate. Lightly shake jar every few minutes to coat all the eggs.

The Knight loves pickled eggs. Me? Not at all... but they're pretty!

Oh my. Hubster LOVES pickled beets. I'll have to show him this recipe. :)

My Dad is a huge pickled egg person... I could never stand them though. But those jars sure do look pretty!
